Halloween Carnivore Party with Air Fryer Chicken Hearts

Carnivore Halloween Party

For the past couple months, my family has tried out the Carnivore diet. As Halloween started to approach, I expected carnivorous recipes to pop up left and right. To my surprise I haven’t found any yet. With my family of four boys I decided to create a few different recipes for a Carnivore Halloween party, filled with spine-chilling flavors.

Where Should I Buy Ingredients?

We’re kicking off the party vibes, with a quick trip to my local Asian market. We picked up a few less common cuts including

Roasted Pecking Duck, for a total of $30, and then grabbed the chicken hearts and beef tendons.

Beef Tendon Puffs

Puffed Beef Tendons

When it comes to snacking on the carnivore diet, options are pretty limited. However, here's an amazing recipe to make chips out of beef tendons. These crispy, savory chips provide a delightful crunch while staying true to the strict carnivore diet. 
Prep Time 9 hours
Cook Time 10 minutes

Equipment

  • Pressure Cooker or Instant Pot

Ingredients
  

  • 1 Beef Tendon
  • 8 Garlic Cloves
  • 1 tbsp Olive Oil
  • 1 tsp salt
  • 3 tbsp white vinegar
  • peppercorn
  • vegetable oil

Instructions
 

  • Optional: Trim your beef tendon
  • Brine tendon with salt and white vinegar for 10 minutes, then rinse
  • Add tendon, peppercorn, garlic, and 1 tbsp of white vinegar to pressure cooker (instapot)
  • Set at natural depressurization for 90 minutes
  • Once cooked, remove from pressure cooker and refrigerate (the collagen substance must harden for slicing)
  • After hardened, slice as thinly as possible
  • Dehydrate for 3-9 hours depending on thickness via oven or dryer
  • Once dried, remove from oven or dryer and heat oil to 380 degrees F
  • Fry beef tendons and leave to cool on a paper towl
  • Enjoy!

Chicken Hearts

Diving into uncharted territory I decided to try out chicken hearts. I’ve tried them before at Brazilian restaurants, but air fryer recipes had me intrigued. As I searched through the recipes I found myself on a mission to create a kid-friendly, extra-crispy chicken heart dish. 

Crispy Chicken Hearts

Kid-friendly, extra crispy chicken hearts in your air fryer. This is the perfect recipe to turn chicken hearts into a breaded and fried chicken snack!
Prep Time 15 minutes
Cook Time 20 minutes
Resting Time 10 minutes

Equipment

  • Air Fryer

Ingredients
  

  • Chicken Hearts
  • 1 Cup Pork Rind Crumbs
  • 1 Tbsp Garlic Powder
  • 1 Tbsp Mustard Powder
  • 1 Tsp White Pepper
  • 4 Egg Yolks Scrambled
  • Ghee

Instructions
 

  • Set up two dishes, one with the egg yolks and the second with the breading mixture including pork rind crumbs, garlic powder, mustard powder, and white pepper.
  • In batches, coat chicken hearts in breading mixture, then dip in the egg dredge and dip once more in the breading mixture
  • Spray newly coated chicken hearts with ghee
  • Set the air fryer to 400 degrees and cook for 20 minutes
  • At the half-way point, shake both containers and then return to air fryer for the last ten minutes
  • Remove from air fryer, let cool and enjoy!

Peking Duck

“Pro tip for Peking Duck perfection: Grab it fresh on party day! Pop it in the fridge and warm it up in the oven for that crispy skin goodness. No tenting here – we’re all about that crunch.

Now, for the grand centerpiece: picture a duck hanging above a cauldron at the table, ready for carving. My DIY moment involved shishkabob sticks through the sternum – makeshift, but effective. Next time, I’m upgrading with Chinese duck hooks for that extra security.

Even without the fancy gear, it turned out to be a carnivore Halloween spectacle. And don’t forget the charcuterie spread – Tillamook Sharp Cheddar, String Cheese, Swiss Cheese, Carnivore Snax Jerky, Country Archer mini beef sticks, and hard-boiled eggs. Perfect for the table and, bonus, great for the kids’ school lunches!”

Now, it’s time for the verdict. I knew my boys already liked Peking duck because they had eaten it a few times in China. And they like the beef tendon puffs because I’ve made them before. But will they eat my Crispy Chicken Hearts?
