Puffed Beef Tendons

When it comes to snacking on the carnivore diet, options are pretty limited. However, here's an amazing recipe to make chips out of beef tendons. These crispy, savory chips provide a delightful crunch while staying true to the strict carnivore diet. 
Prep Time 9 hours
Cook Time 10 minutes

  • Pressure Cooker or Instant Pot


  • 1 Beef Tendon
  • 8 Garlic Cloves
  • 1 tbsp Olive Oil
  • 1 tsp salt
  • 3 tbsp white vinegar
  • peppercorn
  • vegetable oil


  • Optional: Trim your beef tendon
  • Brine tendon with salt and white vinegar for 10 minutes, then rinse
  • Add tendon, peppercorn, garlic, and 1 tbsp of white vinegar to pressure cooker (instapot)
  • Set at natural depressurization for 90 minutes
  • Once cooked, remove from pressure cooker and refrigerate (the collagen substance must harden for slicing)
  • After hardened, slice as thinly as possible
  • Dehydrate for 3-9 hours depending on thickness via oven or dryer
  • Once dried, remove from oven or dryer and heat oil to 380 degrees F
  • Fry beef tendons and leave to cool on a paper towl
  • Enjoy!

  • 1 tbsp Olive Oil
  • 1 tbsp Worcestershire Sauce
  • 1 tbsp Dijon
  • 3 tbsp Dill Relish
  • 2 tbsp Chopped Shallots
  • 2 tbsp Chopped Dill
  • 2 tbsp Chopped Chives
  • Whole Grain Mustard (Placed Around)
  • 1 tbsp Chopped Dill (For Garnish)
  • Salt and Pepper (For Taste)
  • 2 Egg Yolk


  • Slice or Chop Beef Filet and Place in Bowl
  • Mix Beef, Olive OIl, Dill, Worcestershire Sauce, Dijon, Relish, Shallots, Chives, and Salt & Pepper together
